DOUBLE LAYER POKE CAKE




Here is my recipe from Celio's Dessert Carnival.Its no gourmet recipe but we have several summertime birthdays in our family and it is the only cake that seems to go over good for a birthday cookout in the sweltering heat!

Double Layer Poke Cake
White cake mix made as directed on box.
Bake in 2- 8 or 9 inch layer pans sprayed with Pam or other cooking spray.
While layers are baking,
Mix strawberry or raspberry jello as directed.
Poke holes with a large fork in the cooled layers while still in the baking pans. Pour
the unset jello on each layer while still in pan.
Put the layers in fridge for at least 2 hours. Loosen with a spatula around edges well
and turn out on a platter.

This cake is best chilled for several hours or overnight before serving.Frost with a mixture of vanilla pudding and cool whip combined. Garnish with
strawberries or raspberries immediately before serving.
This is a good cake for the hot summer months.

If you go to thehouseinroses.blogspot.com you will see it there with many other peoples dessert pictures. It was not a contest but it was fun!
